DISH – Caribbean Cuisine – Anthony Bourdain Brooklyn

WHAT IS IT?

Caribbean cuisine generally has the following main ingredients: rice, beans, chickpeas, plantains, cassava, sweet potatoes, culantro, tomatoes, bell peppers, coconut, beef, pork, fish and poultry. Stewed oxtail and curried goat are popular examples of Caribbean cuisine, and they are often served with a side of rice or peas.

NOTES

Gloria’s serves a specialty beverage called Seamoss. It is a mix of powdered dried deep-water seaweed, mint, cinnamon and other spices. Michael H. Williams, one of Anthony Bourdain’s guides in this episode, refers to the Seamoss as a “very potent liquid meal”.

DISH – Thai Cuisine – Anthony Bourdain Brooklyn

WHAT IS IT?

Thai cuisine is known for its light preparation, strong aromatic elements and spicy edge. Kai Yaang Tua is a roasted hen stuffed and seasoned with lemongrass, garlic, pepper and cilantro. Khao Man Som Tam is a spicy green papaya salad, traditionally prepared using a mortar and pestle. Muu Paa Kham Waan is pork neck rubbed with garlic, coriander root and black pepper, which is then grilled and served with a sauce of spicy chili, lime and garlic. Laap Meuang is a spicy dish of hand-minced pork mixed with aromatics.

Pok Pok NY was a Brooklyn restaurant that specialized in Northern Thai food. It bowed out of the restaurant scene on September 2, 2018. Its chef-owner, Andy Ricker, has many cookbooks available, and they are fascinating.

DISH – Italian-American Cuisine – Anthony Bourdain Brooklyn

WHAT IS IT?

Italian-American cuisine is largely influenced by the cooking traditions of immigrants from Southern Italy. Italian-American cuisine staples include the use of dry pasta, tomato sauce and olive oil as evident in Lobster Fra Diavolo, which is lobster, shrimp, mussels, clams, and spicy marinara served on top of pasta. The use of tomato sauce on Italian-American cooking is further evident on seafood dishes, like fresh clams and fried calamari, that are often served with Italian red sauce.

WHAT IS IT?

New American cuisine is typically served in upscale restaurants in the USA. This fusion type cuisine mixes American cooking techniques with foreign and molecular gastronomy elements. It gives a different twist to dishes like sweetbread, razor clams, celtuce (a cross between celery and lettuce), ravioli, duck, and steak.

WHAT IS IT?

Russian cuisine takes in various Russian culinary traditions with influences from Caucasian, Northern and Eastern European, Siberian, East Asian, and Central Asian ethnicities. It is founded on peasant food, with soups, salads, porridge, meat, fish, vegetables, desserts and pastries as staples.

DISH – French-Japanese Fusion Cuisine – Anthony Bourdain Brooklyn

WHAT IS IT?

French-Japanese fusion cuisine is characterized by French food served in the Japanese style. Examples of dishes include fluke with radish, octopus with cucumber and smoked paprika, King salmon with trout roe, and lightly smoked cod roe with crispy potato and caviar.
