They had pinakbet made of bitter gourd, long beans, squash, eggplant and okra; crabs in coconut milk and chili, adobo shrimps and white rice.

First: Papaitan, a soup made of heart, lungs, liver and bile of a goat.
Second: Kilawing kambing, chopped goat skin that’s boiled with intestines then served cold.
Third: Sinigang na kambing, a hot soup made of shanks and backbones and bone marrow of goat.
Fourth: Goat head soup.
“That’s really good. That’s good, I like that. I–I gotta tell you it was… nothing about this dish that’s not good. Uric acid, bile, bitter, sour, and guts. The guts was the best selling part but that—that’s good.”

WHAT IS IT?
They had sisig, which is a mixture of pig parts like face, belly, ears, seasoned with calamansi, onion and chili peppers. They also ate chicken barbecue.
