They had chicken balls; taho made of soft tofu, tapioca and arnibal; pancit palabok or rice noodles cooked in annatto seeds then served with egg, pork rind, scallions, toasted garlic and calamansi.

First: Papaitan, a soup made of heart, lungs, liver and bile of a goat.
Second: Kilawing kambing, chopped goat skin that’s boiled with intestines then served cold.
Third: Sinigang na kambing, a hot soup made of shanks and backbones and bone marrow of goat.
Fourth: Goat head soup.

“That’s really good. That’s good, I like that. I–I gotta tell you it was… nothing about this dish that’s not good. Uric acid, bile, bitter, sour, and guts. The guts was the best selling part but that—that’s good.”
