WHAT IS IT?

Alcoholic beverage brewed from grains of cereal, like malted barley.

THE LAYOVER CHICAGO NOTES

Anthony Bourdain described Old Town Ale House as “the most storied, legendary drinking establishments in the nation.” On this episode, he also had drinks at The Hideout, a spot that began in 1934 as a factory bar. For drinks, he also suggested Happy Village Bar and The Mutiny (already closed as of this writing), although he did not visit these two bars during this Chicago trip.

DISH – Double Cheeseburger

WHAT IS IT?

Two burger patties with cheese in between, topped with pickles and ketchup.

THE LAYOVER CHICAGO NOTES

On this episode, Anthony Bourdain visited Billy Goat Tavern located underground, directly underneath the Chicago Tribune building. He mentioned Kuma’s Corner as a burger joint where “the lines may be long but where heavy metal aficionados could find the burger of their dreams”, with burgers having metal names and whisky served on tap. Another option he mentioned was Tank Noodle if you want pho instead of burgers.

DISH – Charcuterie

WHAT IS IT?

A selection of meats and cheeses, like culatello, chicken liver pâté, spicy coppa, head cheese, soppressata, blood sausage, pork and foie gras pâté, testa, and pickled tongue, arranged on a charcuterie board.

Publican Quality Meats is a butcher shop, charcuterie and bakery that also serves liquor.

DISH – Lake Perch, Boudin Noir, Frites and Eggs, Cantaloupe Salad, Speck, and Octopus

WHAT IS IT?

Lake Perch – with arugula, red onion and Parmigiano-Reggiano; Boudin Noir – blood sausage with summer squash and roasted peppers; Frites and Eggs – fries topped with sunny side up eggs; Cantaloupe Salad – with chicory, prosciutto and champagne vinaigrette; Speck – smoked pork belly with burrata, tomato and pears; Octopus – with barley and watermelon.

Anthony described The Publican as a “big, loud, beer-hall-type place” with communal tables and family-style plates.

Phat Style Rice – stir-fried rice bowl with lemongrass chicken, pork belly, pineapple and shrimp; Ramen – noodle soup with braised pork belly, mushrooms and soft-boiled egg.

WHAT IS IT?

Fried dough confection that can be unglazed, glazed, filled or topped with different ingredients.

According to Anthony Bourdain, Doughnut Vault “makes excellent doughnuts”. On this episode, he tried their Maple Buttermilk Old Fashioned doughnut.

Simon’s Bar (Simon’s Tavern) is in the predominantly Swedish neighborhood of Andersonville in Chicago, operating steadily since 1934. Anthony Bourdain recommended Green Mill if you want a bar that is “as pure Chicago as it gets”.

DISH – Red Hots

WHAT IS IT?

Hotdog sandwich made of boiled all-beef frankfurter topped with mustard, white onions, sweet pickle relish, dill pickle, tomato, pickled chili peppers and celery salt in a steamed poppy seed bun.

Anthony Bourdain on Red Hots: “By my way of thinking, the Chicago Red Hot is the finest example of hotdog on the planet”. Bourdain also suggested Budacki’s Drive In as a hotdog option, although he did not visit the spot on this episode.

DISH – Tacos de Lengua

WHAT IS IT?

L & L Tavern is a baseball bar that Anthony Bourdain visited during a game night, and where he had shots of Malört. If you want something more hip, he suggested Skylark in Pilsen.

DISH – Kohlrabi Salad, Roasted Beets, Escargot Ravioli, Roasted Cauliflower, Grilled Octopus, Confit Goat Belly, and Wood Oven Roasted Pig Face

WHAT IS IT?

Kohlrabi Salad – with blueberries and ginger vinaigrette, Roasted Beets – with green beans, kale and anchovy; Escargot Ravioli – with bacon, tamarind sauce, escarole, celery and crispy onions; Roasted Cauliflower – with pickled peppers, pine nuts and mint; Grilled Octopus – with beans, guanciale and fish sauce vinaigrette; Confit Goat Belly – with bourbon butter, lobster, crab and fennel; Wood Oven Roasted Pig Face – with sunny side up egg, tamarind, cilantro, red wine-maple, and potato sticks.
