DISH – Smorrebrod
WHAT IS IT?
One of the things you can easily notice when spending 2 days in Copenhagen is what locals commonly refer to as “open sandwich”. It can be topped with pretty much anything, including meat, seafood, vegetables and different kinds of condiments.
The restaurant serves 350 varieties of Smorrebrod you can choose from.
It’s not a dish, per se. It’s a whole brand new cuisine that has taken the world by storm. It’s based on locality and seasonality. All of the ingredients need to come from a small radius around the restaurant.
Fried fresh herring with a special paste of mustard and caviar, folded, rolled in flour and fried. A sauce made with sweet vinegar and seasonings is then added.
There are plenty of varieties of this dish and this restaurant serves a special one: herring fillets are seasoned with salt, sugar, onions, dill and red sandalwood. The fillet is soaked into the seasonings for 24 hours before consumption.
A soft salty candy made from licorice root, ammonium fluoride and sea salt. The iconic sweet has a variety of favor layers such as peach, sea salt and white chocolate. (NDLR: There’s also an alcoholic liqueur with the same flavour sold across the country called Ga-Jol!)
Lakrids has stores located in Magasin Du Nord (shopping mall) and Copenhagen Airport
