The great Anthony Bourdain left his mark everywhere he went. When his death was announced to the world in June 2018, media throughout the globe chimed in and listed all the great things he had done for their respective city, town, province, country. Whereas before, tourists would shy away from exotic foods, thanks to him, travellers now go the extra mile to find and try local bites. With this in mind, here are all the restaurants Bourdain visited and the dishes he tasted when he shot Anthony Bourdain Quebec for his show, Parts Unknown Season 1 Episode 4 (originally aired May 5, 2013):

DISH – Caesar Salad, Beef Tartare, Shrimp Cocktail, and Dover Sole Meunière

Razor Clams with Beurre Noisette – razor clams with brown butter sauce; Cream of Haddock Roe – haddock roe turned into a cream-like consistency; Coquilles Saint-Jacques – baked scallops; Terrine of Foie Gras – foie gras cooked in a terrine; Head Cheese with Cassis Mustard – terrine made from the head of a cow, pig or sheep, served with black currant mustard; Ris de Veau aux Truffes – truffled sweetbreads; Goose Hearts Persillade – goose hearts with chopped parsley sauce; Morue Salée with Grilled Tomatoes – salt cod served with grilled tomatoes.

WHAT IS IT?

Pressed beef bologna and salami sandwich, always served with mustard and never cut in two.

Wilensky’s is a famous for its Wilensky Special Sandwich and has been serving such, along with egg creams since 1932. Anthony Bourdain had a chocolate egg cream with his Wilensky Special.

Maple Desserts Tower – a tower of sponge maple toffee, maple doughnuts, Beaver Tails, maple cotton candy, almond croissant, biscuits and nougat; Foie Gras with Baked Beans – foie gras with baked beans on a pancake, cooked in duck fat, with cottage cheese and eggs cooked in maple syrup; Sautéed Duck Hearts, Gizzard and Pig’s Ear – a salad of sautéed duck hearts, gizzard and pig’s ear, topped with fried pork rind; Calf Brain and Maple Bacon Omelet – an omelet of calf brain and maple bacon; Panko-crusted Duck Drumsticks – panko encrusted duck drumsticks with shrimp and salmon mouse, and maple barbecue sauce; Tourtière du Shack – a meat pie of whole Laracam cheese, foie gras, calf brain, sweetbreads and bacon, topped with arugula, black truffle; Ham – homegrown and smoked out front, served with pineapple and green beans amandine; Stuffed Chicken – chicken stuffed with cotechino, foie gras and lobster bisque; Tire sur la Neige – maple syrup that has been heated and dripped on snow; Maple Merengue Cake – maple syrup infused merengue cake; Maple Ice Cream with Chocolate Shards – ice cream made of maple syrup served with shards of chocolate.
