WHAT IS IT?

Italian frozen dessert with 3.25% milk and sugar base, and has generally lower fat versus other frozen desserts.

La Sora Maria – La Grattachecca is a roadside stand in the Prati district that Anthony Bourdain suggested as an option over having espresso in the afternoon, although he was not able to visit it on this episode.

Rectangular pizza sold by weight. It can have a variety of toppings, like cherries and foie gras, raspberries with roasted potatoes, goat cheese and fresh mint, and fresh mozzarella and zucchini flowers with anchovies.

WHAT IS IT?

Dishes that follow Roman culinary traditions, featuring fresh and seasonal ingredients that are prepared in a simple manner. Examples include antipasti of fried broccoli and mushrooms, eggplant with olives and peppers, roasted red peppers with pignoli nuts, and nervetti (tender veal salad). Main entrées include Sfilacci (shaved horse meat with arugula and parmesan cheese), Rigatoni with Oxtail Ragu, Fettuccine with Artichokes and Sweetbreads, and oxtail, tripe, heart liver and lungs with lamb intestine, sweetbread with thyme, and veal tail in wine sauce.
