WHAT IS IT?

Collection of small, fine dining plates featuring Brazilian ingredients, like shrimps in caju juice topped with chives, fried oysters with tapioca pearls and fish roe, neck of wild boar cooked sous vide at ultra-low temperature then fried and served with farofa and toasted banana puree, and mashed potato with Brazilian Minas cheese.

DISH – Mocotó, Torresmo, Dadinhos de Tapioca, Sarapatel, and Costelinha de Porco Recheada de Pernil

WHAT IS IT?

Mocotó – hardy stew of cow foot, carne seca, salt pork, sausage and bacon; Torresmo – Brazilian chicharrón prepared through marinating and smoking in-house, blanching, then frying; Dadinhos de Tapioca – small cubes of tapioca and coalho cheese, served with a bittersweet chili sauce; Sarapatel – offal stew; Costelinha de Porco Recheada de Pernil – pork ribs stuffed with a slow-cooked mix of belly and shoulder with a sauce made from the pig’s feet and backbone.
