Equipment

  • A martini glass
  • Japanese style mixing glass (or other glass container of at least 500 ml capacity)
  • Bar Spoon
  • Hawthorne strainer That's what a cocktail strainer is called. Don't use a fine mesh sieve.

Ingredients
  

  • One jar of pimento-stuffed green olives
  • 180 ml Tanqueray gin or your favorite gin. The only substitute my father accepts: Bombay Sapphire.
  • 30 ml Noilly Prat extra dry vermouth or your favorite extra dry vermouth. My father does not accept any substitute for Noilly Prat.
  • 1 ml of olive brine

Instructions
 

Mise en place

  • Place all ingredients and equipment on the work surface.
  • Fill the martini glass with ice cubes and water.
  • Fill mixing glass three-quarters full of ice cubes.

Method

  • Pour gin, vermouth and brine into the mixing glass.
  • Stir with a bar spoon for about 10 seconds.
  • Then, let stand for about 7 minutes. The idea is to let the ice melt and dilute the mixture.
  • Discard the water and ice from the martini glass
  • Pour from the mixing glass into the martini glass using the Hawthorne strainer or use the bar spoon to block the ice and pour very slowly. Don't use a fine mesh sieve.

Presentation

  • The amount of liquid should almost fill the martini cup.
  • Stick two stuffed olives on a cocktail stick and place in the bottom of the cocktail.
  • (Optional) If the weather is warm, you can add a small ice cube to the cocktail.

Notes

If there is more than one glass to fill, use a larger glass container and multiply the recipe quantities.
