First: Pickled walleye, sturgeon poached in smoked butter.
Second: Foie gras bratwurst with homemade turnip kraut, stadium mustard and a pork with soup.
Third: Pig trotters with truffle sauce, crispy belly, and poached egg with pig’s ear.
