Seafood Tower – a tower of seafood, like razor clams, snow crab, mussels, capelin, tuna, whelk and sea urchin; 7-Course Tasting Menu – a tasting menu with 7 dishes, example: Scallop Crudo, Heart of Caribou Tartare, Charred Whelk with Brasciola of Seal and Crispy Cod Sounds, Cod Fillet with Cod Liver Quenelle, Partridge Profiteroles, King’s Dinner (reinvented into a pasta dish), and Chanterelle Ice Cream.
