DISH – “Humorous Chicago-style Dishes”
WHAT IS IT?
First: “Roadkill” made of beet puree, mushrooms into brain form, shredded duck and puff rice shaped like maggots.
Second: “Cuban cigar” made of Cuban sandwich wrapped in a dried cabbage leaf, sesame, Brazil nut garnish.
Third: Barbecue pork topped with cornbread puree.
“Homaro’s like the kid in school who shot spitballs and made fart jokes at the back of the class but still knew all the answers to the math problems on the board. While it appears he takes nothing seriously, the flavors and rather extravagant techniques say otherwise.” -Anthony Bourdain

WHAT IS IT?
They had shrimp cocktail, flintstone-sized baby back ribs and onion rings.
They also had a sandwich called “3 little pigs” made of smoked ham, brioche bun, pork cutlet, 2 strips of bacon and 2 fried eggs.

Fourth: Fluke with caviar and shiso leaf.
Fifth: Akagai clams with rice wine vinegar and white soy.
Sixth: Butter poached lobster with sea urchin roe and sauteed squid.
Seventh: Seared taro with dried wasabi, celery garnish and green apple salad and green olive and soya.

WHAT IS IT?
They had hotdogs. First, the famous Chicago dog: with mustard, neon green relish, tomatoes, onions, dill pickle and topped with celery salt. Second, a foie gras hotdog made of duck sausage with truffle mustard and topped with foie gras.They also had french fries cooked in duck fat.
