DISH – Bœuf Bourguignon

WHAT IS IT?

Bœuf Bourguignon (or “beef burgundy”) is a kind of beef stew that has been braised in beef stock and red wine. Carrots, garlic, onions and bouquet garni add flavor to the dish. It is typically garnished with mushrooms, bacon and pearl onions.

At Le Rendez Vous, Anthony Bourdain was treated to some local dishes. He started his meal with escargots Bourguignon. It was followed by bœuf bourguignon, andouillette and rognon. He finished his meal with cheese.

Lamb refers to sheep that is less than a year old. It is typically rubbed with olive oil and rosemary then seared with butter. It is then placed in an oven to be roasted.

WHAT IS IT?

Nouvelle cuisine is characterized by a lighter and more delicate approach to French culinary traditions. In contrast to classic French cuisine, nouvelle places more emphasis on presentation.

NOTES – Anthony Bourdain Burgundy

Anthony Bourdain had the chance to dine at L’Esperance, owned by renowned chef Marc Meneau, before it closed. Here, Tony sampled oysters covered with watercress in aspic of seawater and the juice of the oyster. He also had Cream of Camembert. Tony was also treated to a dish of roasted turbot with veal bone marrow, as well as Bresse chicken baked in paper. He likewise sampled John Dory fish in lemon broth cooked on a hot stone and had Salers de Buron cheese for dessert.

WHAT IS IT?

Burgundy wine or vin de Bourgogne is wine produced from the valleys and slopes of the Burgundy region. The most famous of Burgundy wines include dry Pinot noir and chardonnay.
