Lechón – whole pig that has been marinated, basted and roasted on a spit before being hacked into pieces; Sofrito – sauce made of aromatic ingredients that have been sautéed in oil.

Fresh plantains fried in pork fat mixed in with a generous helping of pork fat then hand-pulverized in a wooden mortar, then stuffed with shrimp and topped with sofrito.
