Anthony Bourdain Thailand: All Of The Restaurants Picked On Parts Unknown

The great Anthony Bourdain left his mark everywhere he went. When his death was announced to the world in June 2018, media throughout the globe chimed in and listed all the great things he had done for their respective country. Whereas before, tourists would shy away from exotic foods, thanks to him, travellers now go the extra mile to find and try local bites. With this in mind, here are all the restaurants Bourdain visited and the dishes he tasted when he shot Anthony Bourdain Thailand for his show, Parts Unknown Season 3 Episode 8 (originally aired June 1, 2014):

DISH – Sai Ua, Aeb Ong and Lou

WHAT IS IT?

Sai Ua – Northern Thai herbed pork sausage; Aeb Ong – pig’s brain mixed with a curry paste and some herbs then wrapped in a banana leaf to be grilled; Lou – raw blood soup with lemongrass, raw minced meat salad and fried innards.

In Parts Unknown Thailand, Anthony Bourdain described Him Tang as a middle of nowhere restaurant “showcasing one of the distinctive elements of Northern Thai Cuisine: heavy use of animal protein.”

DISH – Frogs and Laap

WHAT IS IT?

In Chiang Mai, frogs are usually grilled, chopped then fried and sprinkled with garlic; Laap is a raw minced beef dish.

DISH – Khao Kha Moo

WHAT IS IT?

Slowly stewed pork leg cooked in Master Sauce, served with sour chili sauce and pickled mustard greens.

The stall stands out from the rest at the Chiang Mai Gate Night Food Market because of the owner (a woman) who wears a cowboy hat.

DISH – Nam-Prik-Ta-Daeng, Midnight Nam Prik Noom and Kai Toon

WHAT IS IT?

Nam-Prik-Ta-Daeng – combination of garlic, chillis, shrimp paste and dried fish; Midnight Nam Prik Noom – made from roasted green chillis; Kai Toon – Thai steamed egg.

WHAT IS IT?

Khao Soi – hardy broth of curry, coconut, noodles and spices, onions and meat; Som Tum – spicy green papaya salad.

Khao Soi Lam Duan is one of the oldest eating places in Chiang Mai that serves Khao Soi.

WHAT IS IT?

Hammered Meat – beef or pork that has been charcoal-grilled then pulverized and served with spicy chili and galangal dip; Buffalo Tendon Soup – bitter soup with buffalo tendon, spiked with bile.

Anthony Bourdain calls this restaurant “Auntie Daeng’s Hammered Meat”. This family-run restaurant is Chef Andy Ricker’s favorite spot in Chiang Mai.
