Restaurant Au Passage in the 11th Arrondissement features a small menu that changes daily, young wines and cheap price tags. Anthony Bourdain also suggested wandering through Rue Montorgueil, one of the last remaining real market streets of the old layout. There are old butcher shops, boulangeries, pâtisseries, fromageries lining the street.

DISH – Jambon noir de Bigorre, Croquettes de Pied de Cochon, Seared Veal and Macaron de Boudin Noir

Jambon noir de Bigorre – slices of cured ham from a purebred Gascon Noir de Bigorre pig; Croquettes de Pied de Cochon – croquettes made with pig’s feet; Seared Veal – rare, served with a tuna pâté.

L’avant Comptoir (L’avant Comptoir De La Mer) is a tiny, standing room only, French small plate and wine bar. Anthony Bourdain suggested Aux Deux Amis if you are in the Left Bank and looking for some good French snacks.

DISH – Asparagus and Mushroom Omelet, and Steak au Poivre

WHAT IS IT?

Asparagus and Mushroom Omelet – fried beaten eggs with asparagus and mushroom; Steak au Poivre – pepper steak with cream sauce.

Anthony Bourdain on Bistrot Paul Bert: “To my way of thinking, there is no greater culinary institution in France than the old school, dino-style, unchanged by time, classic, Parisian bistro. And this place, Le Paul Bert, in the 11th, is one of the best.” For a slightly modern environment, he suggested Septime, also in the 11th.

Cheddar cheese burger with tomato, lettuce, onion and pickles.

THE LAYOVER PARIS NOTES

Le Camion Food Truck serves hamburgers from a food truck, and, according to Bourdain, “probably the best burger you can get in Paris”. Californie Cantine is another food truck that he suggested for organic hamburgers, Mexican tacos and cupcakes.

DISH – Ice Cream Cone

WHAT IS IT?

Ice cream served in a cone.

Bourdain considered Berthillon as one of the great institutions of Paris, where he had a cone of cherry and salted caramel ice cream.

A heap of shellfish, like oysters, mussels, clams, shrimps, crabs, langoustines, periwinkles and whelks.

Le Dôme Café is an old classic brasserie in Paris where Anthony Bourdain had a royal deluxe version of a shellfish tower. According to him, another option for a classic French brasserie experience is Brasserie Wepler (Le Wepler), the largest oyster house in Paris for more than a hundred years.
