Morcilla, boudin noir, mutura, soondae, gyurma, dồi tiết, sargemba, kishka, krovyanaya kolbasa, buristo – these are only some of the names of blood sausage in other countries. Also called Mapo Tofu, this is one of the most popular dishes from the Sichuan province of China. In Japan, uni refers to the parts of sea urchin that are edible – the “gonads”. They are also among Anthony Bourdain’s favourites.
